Course Description: This course is designed to meet the needs of the Allied Health Student and the general education student alike. The major aim of this course is to help the student acquire relevant information about nutrition which they can use professionally and/or personally. The course will cover the practical aspects

of normal nutrition, ways to promote sound eating habits throughout the life cycle, and physiological contributions nutrients make to body structure and function.


Units: 3.0


Prerequisites: Eligible for English 250 and 430A.

Advisory: Chemistry 30A and Mathematics 205.


Textbook: Sizer & Whitney, Nutrition: Concepts and Controversies, latest edition. Diet Analysis +, Version 8.0 or 9.0.


Student Performance Objectives: Students will be able to:


1. Explain some of the uses for and limitations of food selection guides: RDA, food groups and exchange lists.

2. Trace the digestion/absorption of carbohydrates, proteins, and lipids through the digestive tract, focusing on the location of breakdown and enzymes involved.

3. List the three functions which make up the total amount of energy expended by an individual.

4. Examine and discuss the major roles of vitamins and minerals and be able to list good food sources of the major vitamins and minerals.

5. Judge the nutritional adequacy of the diet of a healthy person.

6. Discuss the relationship of nutrition and disease prevention along with prevention of malnutrition.

7. Identify proper food handling techniques for safety and the effect of food processing techniques on nutrient density.

8, Explain the major nutrition concerns through the lifecycle.


Expected Student Learning Objectives: Students will be able to:


  1. Analyze research-based nutritional science, nutrition labeling, US Dietary Goals, and the Food Pyramid.

  2. Describe digestion and absorption of nutrients, energy balance, and energy needs for fitness.

  3. Summarize the concepts of the macro- and micronutrients, their food sources, associated deficiency diseases and related health problems with toxic levels.

  4. .Demonstrate basic skills in using the diet analysis database software to accurately assess dietary adequacy.

  5. Utilize critical thinking skills when reviewing and evaluating nutrition information.


Attendance Policy: Gavilan College attendance standards apply. Any student that misses one more hour than the unit value of the class may be eligible to be dropped. Last day to drop without a W is September 15. Last day to drop with a W is November 20.



Exams: Five (5) exams will be given during the course. There will be four exams worth 50 points and the final, which will be worth 100 points. Exams will have the following format: multiple choice, matching and true/false questions. There are no make-up exams given. You may drop the lowest score of the first four exams. The final exam (exam 5) will be comprehensive and must be taken. All exams are taken online.



Assignments: 1, Assignment #1: Two-day Computer Diet Analysis. Submitted online (50 points)

2. Assignment #2: Internet Nutrition Research Paper with references. Submitted online (20 points)

Late assignments will be accepted up until November 22 and will be penalized 10% or 5 points for each week or fraction of a week that it is late. No excuses are accepted.

Class Activities: 1. There will be 15 exercises, worth 2 points each and 5 forum discussions, worth 2 points each. Attendance= up to 10 points.

Infocompetency 1. Required. You can find them under infocompetency in the online classroom.

Assignments: 2. There are 6 assignments worth up to 5 points each.

3. You will take an infocompetency quiz after reading each internet assignment

and may earn up to 5 points per assignment.

4. This is worth 30 points total.

A = 93-100% (372-400 points)

A- = 90-92% (360-371 points)

B+ = 87-89% (348-359 points)

B = 83-86% (332-347 points)

B- = 80-82% (320-331 points)

C+ = 77-79% (308-319 points)

C = 70-76% (280-307 points)

D = 60-69% (240-279 points)

F = less than 60% (<240 points)



Details about your online class


This class is completely online. You can be in class at any time of the day or night, from

any Internet connection you have available: your own, your friend's, or your local public

library.


However, this does not mean that you will be able to move through the class at your own

speed. A major part of the class involves class participation, discussing assignments and

problems with your classmates. This means that everyone needs to be doing the same

assignments at approximately the same time.


This also does not mean that I live on the computer and will answer all your questions

within 20 minutes. Remember, in a traditional classroom, you have to wait until the next

class meeting to get answers. I will check the discussion board and my email every day,

Monday through Friday. Expect a 24-hour response to emails. If you email me over the

week-end, you may expect a response the following Monday. The course runs Monday to Sunday, with assignments, exams generally due by 11:55 pm Sundays.
